We are going to a New Year's Eve party tonight and I'm taking along champagne bundt cakes. I resisted the urge to christen my brand new mixer with the bottle and settled for using its contents for the recipe.
All in all i'd call it a success....though I realized when making the icing that my laziness knows no bounds. I started by creaming the butter and then realized I didn't have the neccessary confectioners sugar. I REALLY didn't feel like leaving the house, so put some granulated sugar in the blender and ended up with a decent enough substitute. Good to know that works! I'm pretty happy with the finished product.
Please note that this is the only day of the year you'll find me wearing glittery nail polish.
