I wanted to make something special for my mom's birthday. I recalled seeing Andes Candies pieces in the baking section, so my initial plan was to mix those in with the cake batter and sprinkle them on top of the icing. My plan was thwarted though, when I couldn't find them in my grocery store. I figured I would just get the candies and chop them into pieces. But they were not to be found either! Why does Shop 'n Save hate Andes candies? I guess it was just not meant to be. Not to be discouraged, I grabbed a box of Junior Mints and some Grasshopper cookies. I think it was for the best, because I'm pretty pleased with the outcome of these.
I used a dark chocolate box mix for the cupcake, and just made per directions. Sometimes it is most convenient to use the boxed stuff and just doctor it up to create a unique recipe.
I placed a junior mint in the center of each cupcake. I thought it might have remained intact in the center, but upon cutting into the cake, I found the candy melted completely.
