My friend Mary had her third baby boy last week, and I took these over when I went to meet her newest addition. I used the recipe from Bake at 350, which I've always had a lot of success with. I like this one because the cookies come out of the oven just as they go in; they don't spread or rise, which makes for easier decorating.
Vanilla Almond Sugar Cookies
2 tsp baking powder
1 c sugar
2 sticks (salted) butter, cold
3/4 tsp pure vanilla extract
1/2 tsp pure almond extract
Preheat oven to 350.
Combine the flour and baking powder, set aside. Cream the sugar and butter. Add the egg and extracts and mix. Gradually add the flour mixture and beat just until combined,
Parchment paper is my BEST FRIEND when it comes to rolling out the cookie dough. I've read recommendations to just use plenty of flour, but I've not had luck with that myself. For me, rolling the dough out between two sheets of parchment paper is the easiest option.
The paper is also used for actually baking the cookies. Just set it atop a cookie sheet and bake for 10 to 12 minutes!
-3/4 cup warm water
-5 tablespoons meringue powder
-1 teaspoon cream of tartar
-2.25 pounds confectioners sugar
Mix water and meringue powder for 30 seconds, add cream of tartar- mix for 30 seconds, add sugar, mix on slow for 10 minutes with paddle attachment.
