Lemon Olive Oil Cake

Makes 1 loaf cake or 8 inch cake
3/4 cup olive oil
1 large lemon
1 cup all-purpose flour
5 egg yolks
4 egg whites
3/4 cup plus 1 1/2 tablespoons sugar
1 cup powdered sugar
Preheat oven to 350 degrees, grease 9 x 5 inch loaf pan with olive oil and line with parchment paper. Grease the parchment paper and then dust with flour.
I have no idea why this works, but I still felt a lot like Mr. Wizard while doing it. Give this a try! Just hold the mouth of the empty bottle over the yolk, give it a squeeze, and....presto!
Stop the mixer and fold in the flour mixture with a wooden spoon or spatula.
Spoon the batter into another bowl and set aside.
Clean the bowl and the whisk before the next step. Add the egg whites to bowl and beat on high until foamy. Continue to beat on high, adding 1/4 cup of sugar. Beat to soft peaks.
Prepare the icing by whisking together the powdered sugar and fresh lemon juice. Start with one tablespoon and add more juice or water to get to the thickness wanted. Then just drizzle it on and let it set before cutting. Enjoy!
